Ingredients:

For the Salad:

  • 4 cups mixed greens (lettuce, spinach, arugula, or kale)

  • 1 cup cherry tomatoes, halved

  • 1/2 cucumber, thinly sliced

  • 1/4 red onion, thinly sliced

  • 1/2 bell pepper, chopped (any color)

  • 1/2 cup shredded carrots

  • 1/4 cup radishes, thinly sliced

  • 1/4 cup crumbled feta or goat cheese (optional)

  • 1/4 cup sunflower seeds or toasted nuts (almonds, walnuts)

For the Dressing:
